Toronto's Avling Brewery have been knocking out well-crafted, approachable beers for over three years now, and since we last had them on a lot has changed. Cee hung out with the man behind the beers, Brandon Judd, to get stuck into what they've been up to the past 18 months since they last connected, they got deep into their new series of mixed fermentation sours in cans, the differences between their barrel-aged sours and stainless-aged sours, and their "confident enough to be subtle" approach to brewing and how that translates with both their customers and their food. They cracked open a gang of great brews - Meerkat Grisette, Violet Moon (barrel-aged sour with blue plums and Gamay skins), Séance (sour with second-use plums and Gamay skins), Firefly (sour with second-use peaches and citrus zest), and Pale Fire (barrel-aged sour with donut peaches).
