Not Slowing Down - Cinquième Baron Microbrasserie

 

It’s now been around 3 months since Aylmer, QC’s Cinquième Baron Microbrasserie opened mid-pandemic.  They started strong with top quality offerings across a broad range of styles and have shown no signs of slowing down.  Let’s dive straight into another lineup of their recent releases!


Céleste

Pale Ale 5.5%

Céleste pours with an opaque haze and a head as fluffy as the clouds on its label.  The nose is bright and inviting with peach and apricot.  When stone fruit flavours are prominent in IPAs and Pale Ales, they often present fairly ripe.  Interestingly, here I find the peach flavour coming through more on the underripe side.  There’s an earthy component which delivers notable peppery spice.  The mouthfeel is smooth at first with carbonation that gives a bit of a tingle.  The body was on the thinner side, and the finish is fairly dry with a note of white grape.  I like the direction of this one, but for me the tingly carbonation and spicy warmth were a bit too pronounced.  If that were dialed back and the body a bit more full, I think this would have been perfect.


Two Tales Pils

Pilsner 5.0%

Right off the top, this is a Pils with a lot going on.  The nose is layered with earthy, herbal and floral hops.  On the sip there’s a bready malt profile and sharp bitterness.  The mid-palate is especially bold with big earthy and floral notes, as some flavours of grass and peppery spice come alive.  About half-way through I noticed some more complex layers like mild sweetness, which the bitterness cuts right through leading into a crisp, bone-dry finish.


Nectar

Double NEIPA with Mosaic & Sauvignon Blanc 9.0%

An IPA with grape juice is something I don’t think I’ve seen before, and Mosaic with Sauvignon Blanc juice creates a real interesting combo.  There’s an element of the chalky, peach fuzz feel from the Mosaic and some juicy peach flavour as well, but it’s blended almost seamlessly with the grape juice.  The peach is up front with a bit of sweetness and tartness, like sour candy, and it transitions to white grape with some acidity and earthiness in the mid-palate.  It’s dry throughout with only minimal boozy warmth and a slightly astringent finish.  This one has a lot of complexity and a great blend of flavours.


Sous Le Soleil de Amalfi

Gose au Citron 5.0%

With citrus and sea salt, the aroma of this one is kind of like a margarita with a bit of funk.  The palate is light and tart but not thin or watery.  It’s got flavours of candied lemon cut with a saltiness that is present on the finish but doesn’t punch you in the tongue.  There’s a mineral earthiness and a bit of musty funk leading to a bone dry, slightly bitter finish.  This is a summer afternoon refresher right here.


Another killer lineup!  These guys continue to impress me with their range and consistent high quality.  I’m hoping to pay them a visit soon and see their operation in person!
