Episode #31: Quarantine Edition | #Crispyboiz with Jean-Phillippe Lalonde of Brasserie Silo + Birra Bar à Maison | Adjunct Series
There haven't been too many people who have been on the podcast twice, let alone three times, and JP Lalonde is one of those distinguished few. From his beginnings with La Succursale, to opening Birra in the heart of Montreal's Little Italy, to now opening his third brewery right before a global pandemic, JP isn't short of courage, passion and dedication to his craft.
Brasserie Silo is JP's newest project in Montreal's Ahuntsic neighbourhood, so we started with two of his crushable ales (a kölsch and an alt), and he even took us on a tour of the brewery space, which looks beautiful. We then moved into some Birra beers, getting into their dry-hopped sour and coconut porter, covering all the details on his 2019 Czech Republic trip that inspired his Silo beers, what it was like opening and closing a brewery in the middle of COVID-19, and the gloriousness of a LUKR side pull. Cheers!
